Kale is a wonderful green with a unique flavor ranging from nutty to spicy depending upon the variety.  As with most greens that are dark and have a variety of color, Kale is very good for you.  It usually contains a lot of calcium and vitamin C as long as it is grown in healthy, chemical free soil rich in organic matter.  At Parker Produce, we prefer Red Russian Kale, a flat, dark green leaf with tinges of red and purple.  A wonderful purple stalk make this a beautiful plant and vegetable.  Below are some recipes that use Kale.  It is a hearty green that will remain viable as a crop even through the winter.  It's perfect in soups on crisp fall days and cold winter nights and also has uses all by itself.

Oven Roasted Kale

For this great, quick and easy recipe, simply tear the Kale into appropriately sized pieces. Keep in mind that it shrinks a bit when it is roasting.  You can either include the stems separately or discard them.  Toss the torn pieces in olive oil and then sprinkle with sea salt and freshly ground pepper.  Sometimes I add additional herbs and garlic if the mood strikes me.  Place in a casserole dish or cookie sheet and put into a 475 degree oven for 10 minutes.  The Kale should be crispy like chips.  Enjoy.

Bean Soup with Kale

Substitute Vegetable broth for the chicken broth to make this an healthy vegan alternative. 

Winter Vegetable Hash

Substitute margarine for the butter to make this a vegan alternative.
